Okra and Tomatoes

Recipe Story

My parents aren't Southern but I've lived all of my adult life in the Southern US. I love fresh vegetables, but not overcooked or overpowered by ham hocks (a standard in this region). I found inspiration in a cookbook for "the new Southern cook," with recipes from the South's best chefs & home cooks. Summer vegetables that still taste like vegetables! (But of course, you have to like okra for this one).

Ingredients

  • 1 pint fresh okra, sliced
  • 1 pint fresh tomatoes, chopped roughly (or equal amounts in any measure)
  • 1 teaspoon sugar
  • Salt & pepper to taste

Directions

Cook over medium heat for 15 minutes. Serve over rice.‌
